Ingredients.
Green Beans. You're welcome to use fresh or canned here! I'll provide instructions for both below. No judgement. I prefer french style canned green beans.
Olive Oil. A healthy fat alternative to butter.
Yellow Onion. Onions add rich flavor and nutrients like Vitamin C, flavonoids, and sulfur compounds known to fight cancer.
Flour. Gluten free 1:1 flour if you need the gluten free option.
Fried Onions. Gluten free if needed. I buy mine at Sprouts.
Mushrooms. Mushrooms are low calorie but high in nutrients like fiber, pre-biotics and vitamin D. They also add a major umami flavor that gets lost in the traditional Campbell's green bean casserole.
Garlic. Garlic makes every dish better.
Soy Sauce. Choose a Gluten free soy sauce if making gluten free.
Milk of choice. I love Elmhurst Cashew milk for baking rich and creamy dishes.
Spices. Black pepper, salt, and - the secret ingredient that makes my easy green bean casserole next level -white pepper.

Make it ahead: I specifically love this dish, because it's easy to prep ahead of time! Just prep the casserole, stopping before you top it with crispy fried onions. Store the casserole in your serving dish (covered) in the fridge up to 2 days prior. When you're ready to serve, top with crispy onions and bake for 20 minutes. Voila.
Easy Green Bean Casserole
Makes 8 servings.
Prep time: 25 minutes
Cook time: 20 minutes
INGREDIENTS
Green Beans, 2 lbs fresh or 2 cans, drained
1 Tbsp Olive Oil
1/2 Yellow Onion, diced
2-3 cloves Garlic, minced
1 Tbsp Soy Sauce (GF if needed)
3 Tbsp Flour (I use King Arther GF)
2 cups Milk of choice (I use Elmhurst Cashew milk)
1 (6 oz) can Fried Onions (GF if needed, I use Sprouts)
1 tsp Black Pepper
1/4 tsp Salt (or more to taste)
1/8 tsp White Pepper
INSTRUCTIONS
If Using Fresh Green Beans:
Step 1: In a large pot, bring 3-4 quarts of salted water to a boil. While the water is coming to a boil, wash and trim the ends of the green beans. Cut them into segments about 1-2 inches long.
Step 2: When the water is boiling, add the green beans and cook for 3-4 minutes. Drain and immediately run the green beans under cold water to stop the cooking process.
Easy Green Bean Casserole
Step 1: Preheat oven to 375 F
Step 2: Heat 1 Tbsp olive oil in a large pan. Add diced onion and cook for 2 minutes.
Step 3: Add diced mushrooms and cook another 5-6 minutes.
Step 4: Add garlic and soy sauce and toss for another 2-3 minutes.
Step 5: Stir in flour to make a roux, season with salt, black pepper, and white pepper.
Step 6: Stir continuously, while you slowly add milk 1/2 cup at a time, allowing the sauce to thicken as you go. Bring to a boil and cook for 4-5 minutes until sauce has thickened, stir often.
Step 7: Stir in green beans and 1/2 c fried onions. Transfer. toan oven safe dish. When you are ready to cook it, top with fried onions and bake for 20 minutes.
Serving Suggestion:
