Creamy Chipotle White Chicken Chili (DF, GF)

I set out on a mission this weekend to make the BEST EVER white chicken chili. I wanted it to be smoky and a little spicy, with warm chipotle flavors. I also wanted the creamy lusciousness of melted cheeses and cream cheese, but without the dairy.




You guys... this is the chili of my dreams! Go ahead and cancel all other chili plans, because you're only going to want this one from here on out. I can promise you 1,000%, you won't miss the cheese!


The creamy texture comes from blended cashews and the warm, smoky flavor is provided by chipotle peppers. Like all of my recipes, this chili is delightfully easy! I've laid out 2 options below for how to prepare it. You can either follow the crockpot method or prepare it on the stove in just 30 minutes.


My goal with any meal is to pack as many nutrients as I can into one simple dish. This is why I love cooking with REAL foods. That's where we get the good stuff. Here are some highlights of this meal:

Makes 12 cups (6-ish servings)

Ready in: 30 mins (on the stove) or 4-7 hours (crockpot method)

Serving Suggestion:

I served 2 cup portions.

Optional toppings: 1/4 avocado, chili powder, parsley, or a dollop of yogurt (in place of sour cream).
